Mark Spivak spent twenty years in the restaurant business as a waiter, captain, sommelier, dining room manager and operating partner. He is the holder of the Certificate and Advanced Diplomas from the Court of Master Sommeliers. During his two decades in the trenches, he managed every type of facility from fast food outlets and sandwich shops to five-star dining rooms with international reputations. He has been providing restaurant consulting services since 1992.

     Mark has also had a parallel career as a food and wine journalist. He is the former editor and publisher of the Florida Wine Bulletin, and spent five years as wine columnist for the Palm Beach Post. He is currently co-host of Uncorked! Radio on WXEL-FM, National Public Radio for the Palm Beaches (www.uncorkedradio.com); editor of 
Spivak On Wine (
www.spivakonwine.com); Wine and Spirits Editor for the Palm Beach Media Group, and restaurant critic for Palm Beach Illustrated. In addition, he has lectured for the Bordeaux Wine Bureau, Food and Wines From France, and the Swiss Wine Information Council. His work has appeared in publications such as National Geographic Traveler, Continental, Ritz-Carlton, Robb Report, Art & Antiques and Men's Journal.
